Experience and Training
I have been baking since I was old enough to hold a spoon and I am an avid reader of baking and decorating books.  In regards to professional training, I have completed courses at the Bonnie Gordon School of Cake Design, George Brown College (Bakery Arts) and the JS Bonbons Chocolate School.  Caketherapy was officially launched in early 2006.  To learn more about Carla click here.

Booking
I bake each cake fresh to order, one at a time.  Sugar decorations are carefully crafted by hand to your specifications.  For weddings, booking 6 months in advance is highly recommended.  For special occasions, I require minimum 2 weeks notice. 

Payment
A non-refundable 50% deposit is required at the time of booking.  The balance is due two weeks prior to your event.  A post dated cheque is recommended to ensure timely payment of your balance.

Pricing
Wedding cakes start at $6.00 per serving (this is for a simple fondant covered cake with a piped edge).  Special occasion cakes decorated with buttercream start at $150 and with fondant start at $250.  Carved cakes are priced on request.

The inside:

All of my cakes are baked from scratch with the best ingredients available. I use: pure Madagascar vanilla, butter, whole eggs, whole milk, Callebaut cocoa, Lindt chocolate, real cream, whole fruit pureés and whole nuts. All fillings for my cakes are also made from scratch, to your liking – this includes fruit curds, pastry creams and in my opinion, the best icing on earth: Swiss meringue buttercream (the only ingredients you will find in my buttercream are sugar, egg whites, butter and your flavour of choice, be it chocolate, fruit or liqueur). This results in a high quality cake of exceptional flavour. I do not compromise on the taste of my cakes – this is why I do not bake with shortening, low quality chocolate, artificial flavourings or mixes. This also means that I have a higher product cost. If you have doubts, I encourage you to attend one of my tastings.

The outside:

You already know that my focus is designing custom cakes – after all, it is your cake. I do not have a catalogue nor do I encourage my clients to copy a cake that has been created for someone else. Your event has its own unique style and your cake should be personalized to accent the occasion or to intentionally be a focal point. This means that I will have several discussions with you to create a design that is exactly what you envision. You can consider cake design my chosen art form and I am tireless in this regard – I will research historical or cultural elements for a cake, do various sketches and create all decorations individually by hand. This is a time intensive process but ensures the most beautiful results. This is also why I only accept one cake commission per week. With caketherapy you will be guaranteed a completely personalized experience and superb service from your very first contact with me.

Piecemeal pricing:

You may be quoted a lower price by a bakery or cake maker (perhaps in the range of $3-$5 per serving) but that is usually a “base”. Additional charges will likely apply for: “premium flavours” (i.e. anything other than basic chocolate or vanilla); choosing different flavours for each tier; specialty fillings; fondant icing; and decorations or design elements on a per item basis. With caketherapy, the only additional charge is for delivery/setup.

Finishing touches:

My reputation and success depends on your complete satisfaction. Before your cake is cut and eaten, it will be photographed and much admired (hopefully!). This is why I am most meticulous about the finishing aspects of a cake – the smoothness of the icing, the precision of the piping, the flooding and trimming of the board, or finding you the perfect cake stand. Take a close look at the photographs of my cakes – you will see that no detail has been overlooked.
